Smoked Prime Rib - Perfect Medium Rare - Whiskey Peppercorn Sauce

Smoked Prime Rib that is perfect Medium Rare Throughout the entire roast. We will also show you how to make a Whiskey Peppercorn sauce that pairs perfectly with the Smoked Prime Rib.

We wanted to do a reverse sear on the ribeye but did not pull off the Prime Rib Roast until it was already 130 so we sliced right into and it was a perfect medium rare from side to side.

Select a USDA Prime Ribeye Roast - Salt with Kosher salt and then your favorite beef rub - Smoke with Hickory at 225 until reach 125 degrees then sear on Hot grill or 500 degree oven for 3-4 minutes crusting the outside of ribeye roast. Rest 1 minute then slice and enjoy! The keys to a good Prime rib is to cook at low temperature 225 degrees until meat is in the 130-135 temp range and you will get a Coast to coast medium rare.

For the Whiskey Peppercorn Sauce -
Cook off the alcohol in 4 oz of Whiskey
1/2 stick Butter
1 TBL Dijon Mustard
1 Cube Beef Bullion
Heavy Cream
Peppercorn Blend

Heat in a skillet and pout over your slices of Prime Rib.
